It all begins with this first dinner. Not a pop-up restaurant, but a home opening its doors to just a few guests. For three days, chefs, artisans, nature enthusiasts and guests will come together around a shared terroir: that of Mont Blanc.

From the wild plants gathered in the morning to the drink served in the evening, from the art of flower arranging to the wood fire, from the silence of a soundscape journey to the conversations that linger after dinner, this first edition has been conceived as an experience to be savoured in its entirety.

GASTROHUMANIST®️ CUISINE

A free-spirited Alpine cuisine, deeply rooted in the produce, in nature and in the people who shape it. For this first Table Éphémère, Michel has devised a ‘wild’ dinner where plants, fermentation, fire and local produce weave the narrative.

Stacey Feregotto

ETHNOBOTANIST · OENOLOGIST

Stacey will guide us from plant to glass and from foraging to the table. In particular, she will lead the ‘Ramassée’, the sessions focusing on alpine plants, and the food and drink pairings that will punctuate the weekend.

Isabelle Minini

BEST CRAFTSMAN IN FRANCE · FLORAL ART

Isabelle will set the table using plants and materials gathered over the weekend. It’s another way of telling the story of the mountains – not on the plate, but around it.

YOUR HOSTS

Les Cerises Chalet & Spa will be our shared home for these three days. Agnès and Laurent will also be hosting two musical interludes for those who wish to experience the immersive, four-handed journey.

Because a ‘Table Éphémère’ must also leave room for the unexpected, other guests may pop in over the weekend. Marc Veyrat, in particular, is expected to join us on Saturday for a chat about plants, the mountains and cooking.

Stacey takes us on a journey to the very essence of the plant world with a thoughtful first dinner, inspired by plants and the local area.

SATURDAY, SEPTEMBER 26

Facing Mont Blanc.

La “Ramassée”

With Stacey and Michel, we’ll set off along the botanical trail to discover wild Alpine plants. Baskets in hand, we’ll also gather mosses and other botanicals that will later find their way into Isabelle’s floral workshop.

Les “Brassées”

Back at Cordon, we’ll gather for an aperitif infused with Alpine herbs.

The Alpine Casse-Croûte

Pâté en croûte, fresh tomme cheese, apple sourdough bread, Mère Chappaz root, and coffee made from acorns and lime blossom.

Brewing the mountains

Discovering the plants gathered that morning and crafting an Alpine aperitif.

3.30 pm

Time to Yourself

Jacuzzi, sauna, hammam or simply time to unwind.

Composing

A floral workshop with Isabelle, exploring the art of the table through the botanicals gathered that morning.

An exceptional private visit to a farm in Cordon, to discover the people, traditions and cheeses that continue to shape this Alpine territory.

The Final Fire

A Savoyard BBQ over a wood fire, or plancha on the sheltered balcony if the mountain decides to change our plans.

And Afterwards…

Some will head home. Others may choose to stay. Finish what’s left on the table, put the world to rights, return to the spa, or simply let the weekend linger a little longer. There’s no rush.

Between Experiences, Plan Nothing

The programme has deliberately been designed with room to breathe. Throughout these three days, the jacuzzi overlooking Mont Blanc, Finnish sauna, hammams and the chalet’s living spaces are yours to enjoy.

Pick up a book. Sleep. Talk. Spend an hour in the water. Watch the mountains. You’re not here to attend a seminar. A few appointments for massages and treatments may also be available during the weekend.

A Story We’ll Be Telling, Too

This first Table Éphémère will be documented from the earliest preparations to the final moments of the weekend. Philippe, a journalist with La Place du Village, and Laurent will capture the gestures, the foraging, the preparations, the encounters and the table through photography and film.

The idea is not to stage the weekend, but to preserve its memory.
